- 1.5 lbs of grass-fed ground beef
- 3-4 cloves of fresh garlic, minced
- 1 yellow onion, diced
- 2 bell peppers of different colors, seeded and chopped
- 3 medium zucchinis, halved and sliced
- 1.5 cups of cherry or grape tomatoes, halved
- Sea salt and freshly ground black pepper, to taste
- A small handful of fresh herbs like parsley, cilantro, or basil, chopped for garnish
Instructions:
- Heat a large skillet over medium-high heat and cook the ground beef, breaking it into small pieces with a wooden spoon as it cooks.
- Once browned and cooked through, drain any excess grease, then add in the garlic, onions, peppers, and zucchini.
- Reduce the heat to medium, and continue to cook, stirring frequently for about 6 minutes, or until the vegetables are crisp-tender.
- Stir in the cherry tomatoes and remove from the heat. Season with sea salt and black pepper to your taste.
- If desired, garnish with freshly chopped herbs.
