Ingredients:
- 1 Organic Lemon
- 2 Red Onions
- 1 Garlic Clove
- 2 Peppers (around 400g)
- 5 Vine Tomatoes (around 500g)
- 1 Cucumber (around 500g)
- Fresh Oregano and Parsley Sprigs
- 200g Feta Cheese (45% fat content)
- 100g Black Olives (in oil)
- 4 tbsp Cold Pressed Olive Oil
- A pinch of Salt
- A pinch of Freshly Ground Pepper
Method:
- Prepare the Lemon & Aromatics: Wash the lemon in hot water, dry, and finely grate the zest. Halve and juice the lemon. Peel and slice onions into rings, and finely chop the garlic.
- Prepare the Vegetables: Wash and dry the peppers, tomatoes, and cucumber. Dice the peppers, cut tomatoes into eighths, and slice the cucumber after quartering it lengthways.
- Herbs & Cheese: Rinse and chop the oregano and parsley. Cube the feta cheese and drain the olives.
- Assemble the Salad: Whisk together olive oil, garlic, lemon juice, and zest. Toss with onions, peppers, tomatoes, cucumber, half the herbs, feta, olives, salt, and pepper. Garnish with remaining herbs.
