INGREDIENTS:
- 1 cup of diced ripe papaya
- 1-2 cups of cooked rice or quinoa
- 1 ripe avocado, thinly sliced
- 2 fresh cucumbers, thinly sliced
- 1 carrot, sliced thinly or peeled into ribbons
- 1 small red onion, thinly sliced (optional)
- 1/3 cup of green peas or edamame
- 1/2 jalapeno, thinly sliced
- A generous handful of microgreens
- 1 tsp of sesame seeds
For the Exquisite Poke Marinade:
- 1/2 cup Tamari or light soy sauce
- 1 tsp of freshly grated ginger
- 1 tsp (or more, to taste) of sambal oelek chili sauce
- 1 tsp of miso paste
- 1/2 sheet of nori, finely chopped
- 1 tsp of pure maple syrup
- 1 tsp of sesame oil
- A sprinkle of sesame seeds
PREPARATION STEPS:
- Thoroughly blend all the marinade ingredients until smooth.
- Generously coat the diced papaya with the marinade and let it sit for at least 10 minutes to absorb the flavors.
- Evenly distribute rice or quinoa into two serving bowls.
- Creatively arrange the avocado, cucumber slices, edamame or peas, red onion, carrot ribbons, jalapeƱo slices, microgreens, and marinated papaya over the rice.
- Finish by garnishing each bowl with an extra sprinkle of sesame seeds.
